Ingredients
2 c Rice (rice cooker size)
1 cn Swanson Chicken Broth
1⁄2 t Cayenne pepper
2 clv Garlic
1 cn Rotel
1 t Thyme
1 Onion
1 Jalapeno pepper (including seeds)
3 T Creole seasoning
1 lb Chicken breasts
1 Bay leaf
Instructions
<p>In a rice steamer, cook the rice, Rotel, chicken broth, thyme, and bay leaf.</p>
<p> </p>
<p>Chop chicken, onion, and jalapeno. In a pot, cook the chicken until done. Add onion, jalapeno, garlic, creole seasoning, and cayenne pepper and cook until onion is clear.</p>

<p>Add finished rice except for bay leaf to pot and simmer for at least 5 minutes. You may need to add water to keep things from drying out.</p>
