Ingredients
2 c Orecchiette
1 lb Shrimp (peeled and deveined)
1 c Plum tomatoes (sliced)
1 c White wine
1 t Pepper
1 1⁄2 t Cajun seasoning
3 clv Garlic (minced)
1⁄4 c Green onions (chopped)
1⁄3 c Butter
1 c Spinach
Instructions
<p>Bring a pot of salted water to boil. Cook orecchiette pasta until almost al dente for 9 to 11 minutes.</p>

<p>Melt butter in a medium skillet over medium heat. Add garlic, onions, Cajun seasoning, and pepper. Cook for 2 minutes. Mix in wine, tomatoes, and shrimp. Cook and stir until shrimp are opaque. Mix in pasta and spinach. Cover and simmer for 3 to 5 minutes until spinach has wilted and pasta is al dente.</p>

<p>NOTE: I have used as much as a 6 oz. bag of spinach with great results.</p>
