Ingredients
4 Chicken breast
1 Shallot (chopped)
8 oz Mushrooms (sliced)
2 T Butter
2 T Olive oil
1⁄3 c Marsala wine
Instructions
<p>Flatten chicken breasts between sheets of plastic wrap with rolling pin or mallet.</p>
<p> </p>
<p>Season breasts with pepper and garlic salt. Dredge in flour.</p>
<p> </p>
<p>Heat olive oil and butter to medium high. Brown chicken on both sides and remove from pan and drain.</p>
<p> </p>
<p>Add shallot and mushrooms to pan and sauté until oil is absorbed. Remove pan from heat, and add chicken back to pan. Add Marsala wine. Return pan to heat and simmer on low until wine is reduced by half.</p>
