Egg Salad Sandwiches

Ingredients
8 Eggs (hard boiled and chopped)
1 bn Baby spinach
8 Bread slices
1 pn Salt
1⁄2 t Garlic powder
1⁄2 T Pepper
1⁄2 T Dijon mustard
1 T Jalapeno pepper (minced)
3 T Mayonnaise
8 sli Tomato
Instructions

<p>In a bowl, mix mayonnaise, mustard, and jalapeno.&nbsp; Add in pepper, salt, and garlic powder.&nbsp; Mix in hard boiled eggs.</p>
<p>&nbsp;</p>
<p>Spread egg mixture on four slices of bread.&nbsp; Layer with spinach and tomato and top with bread.</p>
<p>&nbsp;</p>
<p>You can add 1-2 slices of bacon (optional) per sandwhich</p>
