Ingredients
2 Onion
3 Bell pepper (red, orange, and yellow)
1 1⁄2 lb Chicken breast
1 Lime
Instructions
<p>Preheat oven to 400 degrees.</p>

<p>Cut the onions and bell peppers into 1/4 to 1/2" wide strips. Place in a 9 x 13" casserole dish. Slice the chicken breast into very thin strips and add to casserole dish.</p>

<p>Sprink fajita seasoning (use full amount from recipe) over the meat and vegetables. Drizzle with 2 T vegetable oil and toss everything. Bake for 35 - 40 minutes, stirring half-way through. Squeeze 1/2 of lime over mixture once removed from oven. </p>

<p>Serve on warmed tortillas with a dollop of sour cream and some minced cilantro. You can add extra lime juice, if desired.</p>
