Oven Fajitas

Ingredients
2 Onion
3 Bell pepper (red, orange, and yellow)
1 1⁄2 lb Chicken breast
1 Lime
Instructions

<p>Preheat oven to 400 degrees.</p>
<p>&nbsp;</p>
<p>Cut the onions and bell peppers into 1/4 to 1/2&quot; wide strips.&nbsp; Place in a 9 x 13&quot; casserole dish.&nbsp; Slice the chicken breast into very thin strips and add to casserole dish.</p>
<p>&nbsp;</p>
<p>Sprink fajita seasoning (use full amount from recipe) over the meat and vegetables.&nbsp; Drizzle with 2 T vegetable oil and toss everything.&nbsp; Bake for 35 - 40 minutes, stirring half-way through.&nbsp; Squeeze 1/2 of lime over mixture once removed from oven.&nbsp;</p>

<p>Serve on warmed tortillas with a dollop of sour cream and some minced cilantro.&nbsp; You can add extra lime juice, if desired.</p>
