Ingredients
2 1⁄2 lb Pork loin (quartered)
1 Onion (quartered)
2 Apples (peeled and quartered)
3 clv Garlic (peeled)
2 c Beef stock
Instructions
<p>Cut pork loin into 4 pieces. Saute in pressure cooker using 1 T of oil. Season with salt and pepper.</p>

<p>Remove browned pork, place meat trivet in cooker, and add pork back in. Add onion, apple, and garlic cloves. Add beef stock and seal pressure cooker. Cook pork for 35 minutes in electric pressure cooker.</p>

<p>When time is up, release pressure, remove pork from trivet and set aside. Remove trivet, and using an immersion blender, blend remaining ingredients. Set cooker to saute and once boiling, whisk in 3 T butter and 3 T flour to make a gravy. Simmer until desired thickness.</p>
