4 1⁄2 lb Pork butt roast
2 t Sea salt
1⁄4 t Chipotle powder
1 t Parsley
1 t Garlic powder
2 t Onion powder
2 t Cumin
1 t Coriander
3 T Chili powder
2 Yellow onions (sliced)
Pepper
Instructions
<p>Mix dry rub ingredients together. Rub roast with seasoning mix.</p>

<p>Place a layer of onions on bottom of slow cooker followed by the roast. Put rest of the onions on top of the roast. </p>
<p> </p>
<p>Cook on high for 5-6 hours. Then turn to low and cook 3-4 hours until the roast shreds easily.</p>
<p> </p>
<p>There is no need for any liquid since the roast will be self-marinading.</p>
