Weeknight Orecchiette

Ingredients
2 T Olive oil
1⁄2 Onion (sliced)
8 oz Italian sausage (casings removed)
3 1⁄2 c Chicken broth
2 c Orecchiette
1 c Arugala
1⁄4 c Parmesan cheese
Instructions

<p>In a large skillet, heat olive oil over medium heat.&nbsp; Cook onion and season with a pinch of salt until onion is soft for 5 - 7 minutes.<br />
<br />
Stir in sausage, crumble, and cook until browned for 5 - 7 minutes.<br />
<br />
Add 1/2 of the chicken broth to the skillet and bring to a boil.&nbsp; Scrape browned bits of bottom of pan.&nbsp; Add orecchiette pasta and cook in broth.&nbsp; Add remaining broth once absorbed by pasta, about 15 minutes.<br />
<br />
Stir in arugala and cook until wilted.&nbsp; Serve in bowls with Parmesean cheese.</p>
