Pressure Cooker Baked Beans

Ingredients
1 lb Navy beans
1⁄2 lb Bacon (cut into 1/2" pieces)
1 Onion (chopped)
2 1⁄2 c Water
1⁄2 c Molasses
1⁄2 c Ketchup
1⁄4 c Brown sugar
1 t Dry mustard
1⁄2 t Salt
1⁄4 t Pepper
Instructions

<p>Rinse beans and sort out stones.&nbsp; Soak overnight in 8 cups water with 1 T salt.&nbsp; Drain and rinse the beans.</p>
<p>&nbsp;</p>
<p>In electric pressure cooker, select the browning mode, and cook bacon until crisp.&nbsp; Remove bacon and place aside.&nbsp; Cook the onion in the bacon drippings until tender.&nbsp; Scrape up the brown bits from the bottom on the pot.</p>

<p>Add the water, molasses, ketchup, brown sugar, dry mustard, salt, and pepper to the onions in the pot.&nbsp; Stir in the soaked beans.</p>

<p>Seal pressure cooker and cook for 35 minutes on high.&nbsp; Wait 10 minutes after the cooking time, and quick release any remaining pressure.&nbsp; Discard any floating beans, and check if beans are tender.&nbsp; If not, cook for additional time.</p>

<p>Stir in bacon and simmer until the desired consistency.</p>

<p>Note: You can use spicy ketchup like Ketchapeno for added kick.</p>
