Pork Tenderloin - Pressure Cooker

Ingredients
2 1⁄2 lb Pork loin (quartered)
1 Onion (quartered)
2 Apples (peeled and quartered)
3 clv Garlic (peeled)
2 c Beef stock
Instructions

<p>Cut pork loin into 4 pieces.&nbsp; Saute in pressure cooker using 1 T of oil.&nbsp; Season with salt and pepper.</p>

<p>Remove browned pork, place meat trivet in cooker, and add pork back in.&nbsp; Add onion, apple, and garlic cloves.&nbsp; Add beef stock and seal pressure cooker.&nbsp; Cook pork for 35 minutes in electric pressure cooker.</p>

<p>When time is up, release pressure, remove pork from trivet and set aside.&nbsp; Remove trivet, and using an immersion blender, blend remaining ingredients.&nbsp; Set cooker to saute and once boiling, whisk in 3 T butter and 3 T flour to make a gravy.&nbsp; Simmer until desired thickness.</p>
